Paprika Chicken with Creamy Paprika Sauce (an easy all-in-one Thermomix dinner)




Last night I got home late after a busy day and didn't have dinner organised, so it was 'Thermomix to the rescue' once again! I had a quick think, and this is what I came up with. Nothing fancy, just an easy and tasty dinner with basic ingredients, that took all of 25 minutes to make. Sometimes that's just what we need when we can't be bothered, right? (It is really yummy though, and the chicken breasts are amazingly tender and juicy when steamed!)

This fed our family of six and there were plenty of leftovers, which is always a bonus since everyone generally wants dinner for breakfast at our house. :)

This recipe is gluten free, and egg free, and if you omit the butter is also dairy free. The sauce is blended with cashews to make it creamy, but if you can't have nuts, see the nut free variation below. I've added some tips for those of you without a Thermomix, so you don't miss out.


Paprika Chicken with Creamy Paprika Sauce
(Serves 6-8)

Ingredients:

Rice
900g water
380g basmati rice

Veges (these are just suggestions, use what you have)
3 carrots, peeled and sliced thinly
200g green beans, topped and tailed
1-2 zucchini, thinly sliced
150g frozen corn

Chicken
600-700g chicken breast fillets, sliced in 2cm thick pieces
smoked paprika powder (approx 1 tsp)
herb salt (eg. Herbamare)
garlic powder (approx 1/2 tsp)
1 Tbsp butter or ghee (optional)

Sauce
60g raw cashews
60g water
2 tsp chicken or vegetable stock paste (my chicken stock paste recipe here)
1 tsp smoked paprika powder




Method:

Pour water into mixing bowl.

Weigh rice into steaming basket and rinse well, then place basket inside mixing bowl.

Place chicken pieces onto Varoma tray and sprinkle with paprika, herb salt and garlic powder, and dot with butter or ghee if using.

Place Varoma into position with lid on.

Turn speed dial to speed 5 for a few seconds to wash the water through the rice. (That's my little trick to make sure the top of the rice cooks well and you don't end up with crunchy bits.)

Begin cooking for 20 mins/Varoma/speed 2 while you cut up the veges, adding them to the dish as you go. (It takes about 10 minutes for the steam to really start filling the Varoma, so it's easy enough to get the veges cut up in that time.)

At the end of the cooking time, check that the chicken is cooked; add a couple more minutes if not.



Remove chicken, vegetables and rice to Thermoservers or serving dishes. (Or if you're having an 
"I don't feel like doing heaps of dishes" night, just leave them in the Varoma and basket and set aside.)

Add all the sauce ingredients to the little bit of liquid left in the bowl. (There should only be about 3cm of water left as the rice has absorbed most of it.)

Blend 1 min/speed 9. Scrape down lid and sides of bowl with spatula and blend again if needed, until smooth. Season to taste.

Serve the rice onto plates, top with veges and chicken, and drizzle with sauce.

Easy peasy! :)

Variations:

Nut free version: I haven't tried this yet, but I think it would be simple to leave out the cashews and add a can of Ayam coconut cream instead, with the 2-3 tsp vege stock paste and 1 tsp paprika powder. Warm it up a bit, 1 min/90C/speed 4. Season to taste.

Non Thermomix version:  Pour 100ml boiling water over the raw cashews and allow to soak (covered) while the meal cooks. Cook the rice in a rice cooker or on the stovetop. Cook the chicken and vegetables in two layers in a steamer, or in a large frypan with a lid, over med-low heat, until done. Blend the soaked cashews with soaking water and remaining sauce ingredients in a powerful blender until smooth and creamy. Season to taste. (Massel stock powder can be used instead of stock paste.)

Chocolate No-Bake Cookies

 

 (Egg free, gluten free, dairy free, nut free options. Naturally sweetened.)
 

This is my healthier version of an old childhood favourite. I remember scraping the hot cookies off the trays with a spoon as a kid, because I couldn't wait for them to cool and set - yum! 
 
The orginal recipe contained 2 cups of sugar (eek!!), so a few years ago I made up this version using honey or rice malt syrup. My kids love them even more than cooked bikkies as they're so moist and chocolatey. I love them because they're so quick and easy. They're great for when you don't want to turn the oven on but really want cookies. :)

1. Cook in Thermomix at 100C for 15 mins, speed 2.

- 250g rice malt syrup (can use honey, but reduce amount to 150g or leave out coconut sugar)
- 50g coconut sugar (or Rapadura) optional
- 30g cacao powder (or cocoa)
- 120g coconut oil (or butter)
- 130g rice/almond milk (or milk of choice)

2. Add and mix on reverse speed 3 until combined.
- 1 tsp vanilla extract
- 220-250g quinoa flakes (or rolled oats)

* If using quinoa flakes, leave in bowl for 10 minutes so flakes soften. If using oats, continue with recipe as soon as mixed. *


3. Drop spoonfuls of mixture onto lined trays and place in freezer to set.
 
Enjoy :)

I like to keep these in the fridge or freezer as they taste best cold and chewy!

 
To make these by hand:
Heat first 5 ingredients in a large saucepan on the stovetop, stirring. Allow to rapid boil for 5 minutes, stirring occasionally. Mix in remaining ingredients and drop by spoonfuls onto trays.

Fajita Chicken & Salad Pizza on Quinoa & Chia Seed Flatbread

This morning when I got up I decided that the last thing I wanted for breakfast was porridge or granola or eggs - I was starving! I wanted PIZZA!!

I looked in the fridge and spied a lonely chicken breast and some baby spinach, and decided on a quick chicken and salad pizza... I know, that doesn't sound much like breakfast food, but I tend to have all sorts of odd things for breakfast. I prefer a savoury breakfast to a sweet one. (Although I will make an exception for chocolate.)

The base of this pizza is made from quinoa and chia seeds, so it's a lot higher in protein than a traditional base. Protein is great in the morning as it fills you up for longer and gives you energy, whereas carbs will make you feel stodgy and sleepy. So skip the cereal and toast and go for pizza! ;-) That is, healthy pizza - not a stodgy, carby pizza. This one is gluten free, dairy free, egg free... even grain free if you don't count quinoa as a grain! (Which I don't, since it's really a seed.)

You can make the base soft or crunchy, depending how you like it. I use this pizza base recipe for flatbread too - I make mini ones for the kids lunches quite often. Spread them thin and cook them until just cooked, and they'll wrap around a filling. Or cook them longer so they're crisp like crackers and serve them with dips.



Snack size quinoa & chia seed flatbread with avocado & fire-roasted capsicum

Try some different toppings, like smoked salmon, sheep's fetta (if you can have it), olives, avocado, or fire-roasted capsicum. Or for a more 'breakfast-y' breakfast, top with scrambled eggs, sun-dried tomatoes and spinach, or a poached egg! Yum.


Quinoa & Chia Seed Flatbread (gluten free, dairy free)

Makes 2 large pizza size flatbreads, or a few mini ones

1. Toast the quinoa in a dry frying pan by stirring over medium heat for a few minutes. Or toast in Thermomix at 100C for 10 mins, speed 1, with MC off. [Optional - to get rid of saponins on outside of quinoa as it may otherwise taste bitter.]
- 150g white quinoa

2. Grind quinoa, chia and salt in Thermomix bowl for 1 minute, speed 9:
- toasted quinoa
- 2 Tbspns chia seeds
- 1/2 tsp sea salt

3. Add water and mix on speed 5 for 10 seconds:
- 180g water

Note: For a soaked version of the flatbread, skip the toasting of the quinoa. Instead, cover quinoa in water and leave overnight, strain in the morning and add quinoa to the Thermomix bowl with the chia, salt and water. Blend on speed 9 for 2 minutes, adding a little more water if needed, and scraping down now and then with the spatula.


4. Drizzle pizza trays with some extra virgin olive oil (use baking paper if needed), and divide dough between trays. (The dough will be more like a sticky batter.) Drizzle the dough with some more oil.


Using your fingertips, pat the dough out evenly into a thin circle, about 3mm thick. I find it's easier to use my fingers than a spatula, as the dough is very sticky. The oil will stop it sticking to your hands.


There should be oil all around the edge of the dough, and a thin sheen over the top. This will make it crispy. If you want it soft, there's no need to use much oil.


5. Bake at 200C for 20-30 minutes, depending how crispy you like it.


(You'll notice mine's quite brown after 30 minutes - don't cook it this long if you want it soft like the picture of the snack size flatbread.)


Fajita Chicken & Salad Topping (gluten free, dairy free)

While the pizza bases are cooking, make the toppings.

1. Chop garlic on speed 7 for 3 seconds

- 2 garlic cloves

2. Add the remaining ingredients except the chicken and mix on speed 5 for 5 seconds

- 20g extra virgin olive oil
- 10g tamari or gf soy sauce
- 1 Tbspn honey
- juice of 1/2 a lime
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp sea salt
- 1/4 tsp smoked paprika
- 1/8 tsp onion powder
- dash of mesquite smoke seasoning (optional)

3. Add chicken and cook for 5 minutes, Varoma temperature, reverse speed soft, with MC off

- 1 chicken breast, thinly sliced

   (There will be a bit of 'juice' left after cooking the chicken - you can just lift the chicken out with a fork or slotted spoon. I actually drizzled the juice over the top of the pizza because it was too yummy to waste!)
 

4. When flatbread is cooked, remove from oven and top with
- baby spinach
- chopped tomato
- thinly sliced Spanish onion
- fajita chicken
- dairy free sour cream (optional - I didn't have any and was in a hurry to eat!)



Warning: this can be messy to eat, but it's worth it. :)

Sesame Salmon & Vegetables with Creamy Tikka Sauce

 
 
The other night I was so tired, and really didn't feel like cooking dinner. I was very tempted to just give in and buy fish and chips. But I pulled myself together and dug a couple of salmon steaks out of the freezer, popped them into some salty water to thaw out, and began chopping veges. In thirty minutes (yes, 30 minutes!) we sat down to this absolutely delicious meal. Thank goodness for my Thermomix. There's hardly ever an excuse to have takeaway when you have a Thermomix... you can have a restaurant quality meal in half an hour.

I thought I'd better write the recipe down so I remember what I did for next time. So here it is - try it next time you don't feel like cooking!
 
[Note: I had leftover cooked quinoa in the fridge, so I served the salmon and veges on that. You could even leave that out and just serve it on salad greens; or you could cook the quinoa in the rice basket while the sauce, fish and veges are cooking. An all-in-one meal!]



1. Cube salmon, drizzle with tamari and sesame oil, set aside.
- 2 or 3 salmon steaks, cut into 2 cm cubes
- tamari & sesame oil, to taste

2. Chop up some veges and place in Varoma dish:
- carrots, sliced
- broccoli, in small florets
- orange sweet potato, cubed (optional)

3. Place cubed salmon on top of veges. Drizzle a little more sesame oil and tamari over the veges if you like. Sprinkle with sesame seeds.

4. Pour into bowl of Thermomix:
- 400g coconut cream or milk
- 400g water

5. If you're cooking quinoa at the same time, weigh the dry quinoa into the rice basket, rinse well, then place in bowl:
- 350g quinoa
   Place lid on bowl, set Varoma dish on top, and cook at Varoma temp for 20 minutes, speed 4.

6. Check that everything's cooked, set Varoma dish onto its' lid (to catch drips), and tip quinoa into a serving dish. Add the following to the juices left in the bowl and whiz up on speed 9 for a minute:
- a handful or two of raw cashews (depending how thick you want the sauce)
- 2 cloves of garlic
- about a cm of raw ginger (optional)
- a teaspoon of vege stock paste
- a large tablespoon (or two) of tikka paste (homemade, from the *Thermomix Indian cookbook.)
- a teaspoon of Rapadura (or honey)
- a dash of tamari
*This is the best tikka paste EVER - you need the Indian cookbook even if it's just for this recipe!! Oh, and also for the awesome Butter Chicken recipe. :)

7. Serve quinoa onto the plates, top with some raw baby spinach, then the salmon and veges, then the sauce.

Creamy Chicken & Brown Rice Soup


This is a very filling soup that my family love - great for a quick winter meal.  Serve with some fresh bread and a green salad, and it will feed about six people for a main meal.  The soup becomes quite thick as it cools down, and could be thinned down a little more with some rice-almond milk if you like.  (We like it thick.)

If you have a big family, or like more veges in your soup, you can add more chicken to the soup (leaving the peas out) and cook at Varoma temperature with the peas and other veges steaming on top. Place the steamed veges in individual bowls and spoon the soup over the top.



1. Grind rice in Thermomix bowl for 1 minute on speed 9. Add almonds and grind 20 secs on speed 9, or until fine. Set aside.
- 50g of raw brown rice
- 50g raw almonds

[Note: raw cashews can be used instead of almonds for a smoother soup]

2. Place onion, garlic cloves, celery and carrot in bowl and chop for 3 seconds, speed 5.  Add oil (or butter) and cook for 3 minutes, 100 degrees, speed 1.
- 1 onion, halved
- 2 garlic cloves
- 1 stalk of celery, quartered
- 1 large carrot, quartered
- 30g olive oil or butter

3. Add chicken and cook 3 minutes, 100 degrees, speed 1.
- 300g cubed chicken

4. Add water, stock paste, rice, and ground rice and almonds, and cook for 30 minutes, 100 degrees, reverse, speed 1.
- 1 litre water
- 2 Tblspns chicken stock paste (made in TMX - see below) or vege stock paste
- 100g raw brown rice
- ground rice & almonds

5. Add parsley and peas, cook another 5 minutes, 100 degrees, reverse, speed 1. Adjust seasonings if needed, and serve.
- handful fresh parsley, chopped
- 100g frozen peas

[Note: if you like it saltier, just add another spoonful of stock paste.  If you're using bought stock powder, you may want to add some tamari for extra flavour.]

Chicken Stock Paste

To make the stock paste, mince up 300g of raw chicken.

Add 300g veges (leek/onion/shallots, carrot, garlic, celery, celeriac - your choice), and a few sprigs fresh herbs (rosemary, thyme, parsley). Chop for 10 seconds on speed 5.

Add 150g coarse sea salt, 1 bay leaf, 50g white wine (or 1 tsp of apple cider vinegar), 1 clove and 5 coriander seeds (or a dash of ground cloves and a dash of ground coriander).

Cook for 20 mins, Varoma temp, speed 2, with simmering basket on top instead of cap.

Replace cap and blend 1 minute, speed 10.

Use 1 tsp in 500g water for chicken stock.

Quick Yeast-Free Spelt Bread



This recipe is a lot like my scone dough recipe. In fact, that's what it started out as, but it kind of morphed into this! If you want to make damper, you pretty much just use the scone recipe and shape the dough into a ball, flatten it slightly, cut a cross into the top, brush with milk, and cook it. But this time I did it a little differently - I used hot Almond-Sunflower Seed milk and olive oil, and it changed the consistency to a much more bread-like, less crumbly loaf. We loved it! The outside was crisp and the inside soft, and it was quicker than making yeast bread. Perfect for breakfast, spread with a thick layer of avocado, some herb salt, and lots of freshly-ground pepper - yum!

1. Preheat oven to 220 degrees celcius.

2. Make a batch of Almond-Sunflower Seed milk (or heat your choice of milk to 50 degrees) and set aside.

3. Weigh into Thermomix bowl and mix on speed 6 for 6 seconds (no need to dry bowl unless you want to grind part of the grain first):
- 440g plain unbleached spelt flour (can use partly wholemeal spelt flour)
- 4 tsp baking powder
- 1/2 tsp sea salt

4. Add oil and mix for a few seconds on speed 5:
- 60g olive oil

5. Add and mix for 5 seconds on speed 5, until dough roughly comes together:
- 230g warm Almond-Sunflower Seed milk
- 1 tsp apple cider vinegar

6. Set dial to closed lid position and mix for 20 seconds on interval speed, until dough forms a soft ball. (Should spring back when you poke it - if too sticky, add some more flour.)

7. Turn dough onto lightly floured bread mat and form into a smooth ball. (The dough will be slightly bouncy, like bread dough, not too soft and sticky like scone dough.) Transfer dough to a floured oven tray. Flatten slightly, and cut a 2cm deep cross into top of ball with a sharp knife. Brush with some more of the warm milk and place tray in hot oven.

8. Cook for 10 minutes on 220 degrees, then 20 minutes on 180 degrees. Bread should be nicely browned and sound hollow when tapped underneath. Leave to cool for a few minutes before slicing.

Quick Chocolate Sorbet


Being dairy-free makes it difficult sometimes when you're craving chocolate desserts - they all seem to have milk or cream in them! But after seeing a recipe for chocolate sorbet, I realized it was a completely milk-free dessert, and something I definitely needed to add to my 'repertoire'! So when some friends came over for lunch the other day, I gave it a go in the Thermomix - not the usual version, where you make a chocolate syrup, freeze it, reblend it, etc, etc... can't be bothered with that. I wanted an INSTANT version, where you don't have to wait forever to get your chocolate fix!

(It was starting to melt by the time I took this photo, as we left it sitting in the Thermomix while we went running around the yard looking for an egg, so we could add an egg white to make it more creamy! ...Finally found one - those confounded chickens have been hiding their eggs... I was very tempted to squeeze one to see if I could get an egg to pop out!)

This way of making a chocolate sorbet is not quite as smooth as if you made it the traditional way - you can taste the little slivers of chocolate as they haven't been melted - but nobody complained! The second time I made it, I tried slightly melting the chocolate, Rapadura, cocoa, coffee, vanilla and salt; blended them together, then added the egg white and ice and ground it all up... but I found it worked better when you didn't try melting them. Just make sure you grind the Rapadura and chocolate really, really well, before adding the other indgredients.

You can add less Rapadura and more cocoa if you like a darker chocolate flavour. Enjoy!

1. In your Thermomix bowl, pulverise on speed 9 for 30 seconds:
- 200g Rapadura

2. Add chocolate, and pulverise on speed 9 for another 30 seconds, until it's a very fine powder:
- 170g good quality dairy free dark chocolate, chopped in small pieces (eg: 70% cocoa Rapadura chocolate, or make your own with this recipe, or this recipe)

3. Add, and pulverise on speed 9 for 1 minute, using the spatula to help it mix:
- 30g good quality cocoa powder (eg: Planet Organic Cocoa)
- 2 Tblspns strong brewed coffee
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
- 1 egg white (opt. for creamier result)
- 700g ice cubes (add half first, grind a few seconds, then add the rest)

4. Eat it quickly before it melts!
...or freeze in a shallow tray, or in ice cube trays, and reblend when ready to serve.

Thermomix 'Fried' Rice


This is a very easy, quick and healthy way to make a big batch of fried rice. It easily feeds our family of six, with leftovers. The rice, veges and egg are actually steamed - no oil is needed. You can use basmati rice and it will cook in about 20 minutes, or with brown rice it will cook in 35 minutes. And you don't have to stand there stirring! Thanks to my friend Nancy for teaching me this method years ago with bacon and veges - there's lots of possible variations, so be creative and make up your own versions too. You can use as much meat and veges as will fit in the Varoma - I've just given some suggestions, not definite amounts.

1. Place rice basket into Thermomix bowl, and weigh in:
- 400g of raw rice (or less if you want a smaller batch).

2. Remove basket, and pour into bowl:
- 400g coconut milk
- 500g water (for white or basmati rice) / 700g water (for brown rice)

3. Rinse rice under tap, then place basket back in bowl. Fasten lid onto bowl, place Varoma on top, and start cooking - Varoma temperature, 20 mins (white) or 35 mins (brown), speed 4.

4. While rice begins cooking, chop up meat and/or veges, placing it into the Varoma as you go.
(I do it this way, as it's quicker than preparing it all then starting the cooking. I put each ingredient in as it's prepared, replacing Varoma lid each time - meat, then hard veges, then quicker cooking veges - that way the hard and soft veges and the meat are all finished cooking at the same time.)

5.  Place the cubed meat in the bottom of the Varoma in a single layer, then top with the preferred veges:
- 100g - 200g of cubed chicken or fish and/or prawns (you can marinate it for a little while first in some soy sauce, curry powder, garlic, ginger, and honey, or whatever marinade you prefer)
  (or some chopped bacon, preferably organic)
- 1 sliced onion/shallots/leeks
- carrots, sliced or julienned
- celery, sliced
- kohlrabi, thin strips or julienned
- broccoli/cauliflower florets
- cabbage, shredded
- spinach/silverbeet, sliced
- frozen peas & corn
- cashews or slivered almonds (opt.)

6. Line the top Varoma tray with a piece of wet baking paper, and pour in:
- 4 to 5 eggs, whisked
Replace lid, and leave to steam.

7. Check meat, veges, egg and rice after 20 mins to make sure they're all cooked. (With basmati rice, it's generally cooked after about 17 minutes, but I just leave it for the full 20, and everything's usually done by then. With brown rice, just add the veges when there's only 15 minutes left to go, and add the eggs when there's 5 minutes left, and they should be done at the same time as the rice that way.)

8. Remove Varoma and place lid underneath.  Remove rice basket using spatula, and tip rice into Varoma bowl.  Add the meat and veges. Slice the egg up in tray (see photo) and tip into Varoma bowl with rice.  Season with some tamari sauce / soy sauce / sweet chilli sauce, mix together gently, and serve!


Slice egg in the tray and add to rice and veges.


Serve fried rice in the Varoma bowl with the lid underneath to catch any drips.
