Thermomix Menu Plans - 25th June


Hi everyone! How did your week go? I hope you had plenty of Thermomixing successes! Well this week is going to start with a bang for me... My oldest boy just turned 13 today, (I now have two teenagers - aaaargh!! How did I get this old??), and he's celebrating by inviting all his friends over to have a gigantic Nerf war tomorrow! Help...


I get to cook for the hungry soldiers. Yay. Party food for lots of hungry boys when you're a dairy free, wheat free, sugar free household can be challenging... but I can do it. Okay, I did give in and buy one bag of Freddo Frogs and some plain chips for the dip, but the rest is homemade and healthy. (See menu below for details)

As well as all the party cooking tomorrow, I've got to cook for an International dinner we're having tomorrow night to celebrate the launch of Thermofest, plus dinner for the kids at home. So it'll be a big cooking day. Good thing I have a Thermomix (or two)! (And may I just mention here, our next Thermofest destination is very exciting! This year, Hawaii - next year...??? Can't wait!)

(Party!) Pizzas: dough made in tmx, toppings chopped in tmx - putting it all out on the table and letting the boys make their own!
Homemade fizzy juices with fruit, green stevia, rapadura & soda water (tmx);
popcorn; chips & French Onion Dip & guacamole (dips made in tmx);
Chocolate pecan layer cake (a recipe I made up today - tmx) with cashew cream (tmx) & strawberries;
Banana ice cream (maybe with salted caramel sauce) tmx
(I had planned on homemade chicken & vege sausage rolls too, but don't think I'll need them; and he did ask me to make beef jerky too, but it won't be ready in time.)

Steph's baked fish in coconut milk, except I'm going to steam it in the Varoma with rice :)

Wednesday:
Meatloaf & veges with red sauce (tmx, sauce in bowl, meatloaf & veges in Varoma)

Vietnamese fish curry with sticky rice (tmx, curry in bowl, rice in Varoma)

Friday:
Lentil bolognese (tmx) with raw vege 'noodles'

Saturday:
Butter chicken (made with coconut cream - tmx) and rice (tmx) and salad

Sunday:
Roast beef & veges (gravy made in tmx)

Sticky Pecan Muffins



This morning I managed to get up before everyone else, so I decided to make something a bit special for breakfast. I found this recipe here, and tweaked it to make it healthier and Thermomix friendly. This is what I came up with. It's almost dairy free - there's 1 tablespoon of butter in the caramel topping - but you could use coconut cream instead to make it completely dairy free. I didn't have any coconut cream left, so I just used butter. It only uses 1/2 a cup of flour - I used spelt flour, but I'm sure it would work fine with plain gluten free flour or almond flour as well.

Here's a time-saving tip: when you're making cakes or muffins that have chopped nuts in them, don't bother chopping the nuts first, just add the whole nuts with all the other ingredients and chop and stir all at once on speed 4-5 for a few seconds. If you have a look at the original recipe, you'll notice I cut the steps down from 5 steps to 1 step for the muffin mixture. Yep, I like 1-step recipes. Well, okay, the caramel topping is another step or two, but it's easy as. And really delicious, so don't leave it off!


I'm really happy with the way these muffins turned out using macadamia oil instead of butter - the texture is perfect. For those of you wanting to convert your own muffin recipes for the Thermomix, just remember you have to be really careful not to overmix, or you'll have heavy, dense muffins. Notice that I only mix these for a few seconds, scrape down the bowl, and gently mix for another few seconds - that's it! Don't beat all the air out of them. You could use this basic mixture for all sorts of muffins - blueberry-pecan is next on the list for me I think!

Makes 12 large muffins.

Preheat oven to 180C. Generously butter (or oil) a 12-cup muffin pan (or madeleine tin).

1. Chop pecans on speed 4 for a couple of seconds, just until roughly chopped:
- 70g raw pecans
    Remove to a bowl.

2. Melt in Thermomix at 100C for 2 minutes at speed 1, or until just melted and combined:
- 3 Tbspns Rapadura
- 2 Tbspns honey
- 1 Tbspn butter or coconut cream

3. Spoon 1 Tablespoon of caramel mixture into each muffin cup.


Add a sprinkling of chopped pecans, and set aside.



No need to wash out Thermomix bowl.

4. Add all remaining ingredients to Thermomix bowl and mix on speed 4 for 6 seconds; scrape down sides of bowl and mix for another 5 seconds on speed 3 to combine.
- 130g raw pecans
- 110g macadamia oil
- 80g Rapadura
- 80g spelt flour (or gluten free or almond flour)
- 3 large eggs (55-60g each)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp sea salt

5. Divide mixture evenly between muffin cups. Bake for about 20 minutes at 180C, or until skewer poked into centre of muffins comes out clean.

Dairy Free French Onion Dip



Today I was making my dairy free cream cheese recipe, and since it makes so much I decided to turn half of it into a French onion dip. This is what I came up with. I'm not sure if it tastes as much like French onion dip as French onion dip does, but I thought it was pretty awesome! Ha ha! My only taste testers were my kids, and they kept coming back for more, and my daughter said, 'Everyone's going to go crazy for this!!' - so it must be okay... Try it and let me know what you think.

If you've never tried caramelizing onions in your Thermomix, you really should - they turn out amazing, and you don't have to stand there stirring them. I think I've got it nailed now. Woo hoo! Here's a pic of the Thermomix caramelized onions... yummo!




Okay, you ready for it? Here's the recipe!

1. Chop onions for 2 seconds on speed 5. Don't be tempted to chop for longer, you want them a bit chunky!
- 2 large brown onions, halved

2. Add Rapadura, oil/ghee, baking soda, salt & pepper, and cook at Varoma temperature for 15 minutes, reverse, speed soft, with the MC off to let the steam out.
- 1 tspn Rapadura
- 50g olive oil or ghee
- 1/2 tspn baking soda
- 1 tspn sea salt
- pepper

3. Add 2 Tbspns water to Thermomix bowl and cook for another 5 minutes, Varoma temp, reverse, speed soft, with MC off. The water helps to deglaze the base of the bowl. Remove onions to a bowl to cool down.

4. Make a batch of homemade mayonnaise, and a batch of dairy free cream cheese.

5. Return onions to Thermomix bowl, along with remaining ingredients, and mix gently on reverse speed 3 until well combined, using spatula as needed.
- caramelized onions
- 250g dairy free cream cheese
- 100g homemade mayonnaise
- 1 tspn fresh lemon juice
- 1 tspn onion powder (if you like a stonger onion flavour)
- 1 tspn vegetable stock paste (or half a tspn if you like less salt)
-1/2 tspn tamari or soy sauce (optional)
- some finely chopped fresh chives

6. Garnish with some more finely chopped chives.

Serve with crackers, plain chips, or raw vege sticks.

Thermomix Menu Plans - 18th June



Hi everyone! I've decided to change how I do 'Thermomix Menu Plans', as I've been having a bit of 'spamming' happening on my 'linkie' and I can't delete them. Very frustrating! So I've decided to get rid of the link-up widget at the bottom of my menu plans, and invite people to link up via my Quirky Cooking Facebook Page instead. When my menu plan is posted each Monday, I'll post the link on my FB page. Then anyone who'd like to share their Thermomix menu for the week can link to the menu on their FB page or website in the comments. That way everyone will be able to see them, it's easy to click through to the menus, and it'll be easier for me to delete any spam. Hope no one minds about the changes... I just think it might work better. And there's always plenty of comments and interaction on Facebook (which is what I love about it!) so we might get more menu plans to check out than we've been getting here... yay! I know I love to see what you guys are cooking, and get some inspiration - I hope you do too.

There really hasn't been much exciting happening in my kitchen in the past week, I'm afraid, because I was sick with a cold for a few days and only got up to start the chicken soup cooking, or to make myself a hot drink! My kids did a good job of looking after me... Simi, my 13 yr old, brought me a hot cup of tea in bed every morning, and my girls brought me breakfast in bed and made lunch (and sometimes dinner) for the family as well. Here's what they made one morning - scrambled eggs with silverbeet and sun-dried tomatoes... yum :)


(See, I can't help myself - I even take photos of my food when I'm sick in bed! As my son said, 'Thank goodness she's got her iPhone so she doesn't get bored!' Lol!!)

Last week's menu was pretty much a wash-out with me being sick. We ate a lot of homemade chicken soup; chicken and vege curries with fresh turmeric, ginger, and garlic all minced up and added at the end (raw) for extra goodness; and lots of fish and greens. This was lunch on Sunday - leftover baked sweet potato and king salmon 'hash', served on baby cos lettuce leaves, with some hot chilli sauce and tamari sprinkled over. So simple, but yummy.




So that's about it for food photos this week... Sorry! Will a sunset do? (Taken at the end of my street from the car window.)



There was a bit of discussion on my Facebook page last week about whether it's cheaper to eat healthy food or junky food (eg. takeaways). I think it's cheaper to eat healthy food, especially if you're comparing takeaways to basic, cooked-from-scratch meals! I save heaps of money by cooking from basic ingredients, not from packets and tins and jars, and by avoiding takeaways. (And by buying bulk!!)

One of the difficulties that was mentioned was the fact that free range or organic chickens are so expensive. Well, I still think you're going to save money if you start with a whole chicken, than if you go and buy a bucket of KFC! But to help prove the point that healthy (even organic) can be cheaper than takeaway, I'm going to share some of my 'eating healthy on a budget' tips in general, and my 'how to stretch a chicken' recipes in particular. I can get three or four meals out of one chicken. You'll notice a few chicken recipes on my menu this week, as I cook and take pics of my 'stretchy chicken' meals, so keep an eye out for those blog posts - they'll be coming up soon.

(breakfast) Chicken & noodles (made from chicken stock that had been simmering all night in the slow cooker, some mung bean vermicelli, garlic, veges and tamari);
(lunch) Chicken & vege pasta (made in the Thermomix with some of the chicken that was poaching in the stock, plus lots of veges & some gf pasta);


Chicken pasta = happy kids!

(dinner) - had a Thermomix cooking afternoon here! Pure fruit sorbet (made from frozen banana & berries), spelt bread rolls, guacamole with carrot slices for 'crackers', raw beetroot salad, pasta e fagioli with gf pasta, grain free vege pasta (vege pasta sauce cooking in bowl, cabbage 'noodles' steaming in Varoma) and dairy free orange-vanilla custard (made with rice-almond milk). Plus some baked cranberry-glazed ham and veges at Grandma's house afterwards ;-)


Tuesday:

(lunch) Coconut lemon chicken soup (tmx)
(dinner) Fried rice (tmx) and green salad


Wednesday:

(lunch) Fish, leftover fried rice (warmed up in tmx Varoma), salad
(dinner) Baked sweet potatoes topped with tuna-a-la-king (tmx)

(lunch) Beef & corn pie (grain free, tmx prep & baked in oven); green salad
(dinner) Steamed fish (tmx), mashed potato (tmx), salad


Friday:

(lunch) 'Roast' lamb (steamed in Varoma, seared in pan) with garlic quinoa (cooked in basket towards end of lamb cooking time), and steamed veges (tmx)
(dinner) Pizza - grain free almond meal crust (tmx), dairy free avocado salad topping (tmx)

Thermomix Menu Plans - 11th June



Hi everyone, how's the menu planning going? I seem to be getting lots of messages lately from busy mums telling me how much menu planning is helping them regain some sanity! That's great - I know it really helps me to have a basic plan of what I'm going to cook each day. Coming home at the end of a long day THEN trying to decide what to have for dinner usually ends up in frustration and take-aways, in my experience. So do your family a favour and plan this week's meals! :)



I updated a few recipes on my blog this week, and I must tell you to try the Smoked Salmon & Sweet Potato Soup! (above) It's so much more delicious with orange sweet potato than regular potato. It's definitely soup weather, and I'm sneaking soup onto the menu at lunch times a lot - I love soup.

I've also updated my gluten free, dairy free Croquembouche recipe - now I just need to make one to get a better photo... I did try, but I ran out of time and all the profiteroles and chocolate pastry cream (photo below) got eaten. Maybe this week I'll try again. I have a baby shower to go to, so that would be something fun to take!



Last week I posted the recipe for my gluten free, egg free Chia, Buckwheat & Quinoa Bread, which I'm loving. Yesterday I worked on making a soaked version, for better digestibility, and it worked really well, so I'll be adding that variation to the recipe today. I'm trying to get back into soaking my seeds, nuts and grains before using them, as it's much healthier... just takes a bit more planning ahead and sometimes I get so busy I forget. The next step is to start fermenting veges again...



This week I'll hopefully get my recipe for Fish Pie with Cauliflower Mash (above) posted, as I've had a few people ask about it. We're eating a lot of fish lately in an effort to increase the Omega 3's in our diet, so I bought a 10kg box of King Salmon from a local fisherman, which works out heaps cheaper than buying it at the shop. I'm working on getting more creative with my fish recipes, as I tend to just pan fry it and that gets a bit dull after a while. If you have any amazing fish recipes, let me know!

For those of you in Far North Queensland, you need to check out the Real Food Network, which is where I get my awesome Community Supported Agriculture food boxes. They are running a survey/competition and you can WIN $500 worth of local, mostly organic fruit and veges. Let's support our local farmers and buy local.


My basic menu plan for this week is below. I'll be posting some breakfast and lunch ideas on Facebook as usual, and just planning a few of those ahead, as they depend on what leftovers we have, what veges come in my CSA box, etc. If you need some inspiration for your menu planning, check out the Thermomix Recipe Community, the blogs linked up below, this Thermomix Menu Planning Facebook group, or just google Thermomix + whatever ingredient you want to use, and you'll most likely come up with a recipe! Leftover lamb roast & veges made into soup for lunch

Tuesday:
Mexican steak salad - marinated rump steak, steamed in Varoma and sliced into strips, served on a Mexican style salad with dairy free sour cream and salsa

Wednesday:
Pan fried fish with mashed potatoes & steamed veges (mash & veges cooked in tmx at same time)

Thursday:
Sweet 'n' Sour Beef with cabbage 'noodles' - cabbage strips steamed in Varoma while beef stew cooks in bowl (tmx)

Friday:
Fried fish strips (cooked like this) with steamed sweet potatoes (tmx) & raw vege sticks

Saturday:
Pesce Puttenesca from "In the Mix" - fish in a tomato sauce, with steamed veges (tmx)

Sunday:
Roast chicken & veges, gravy in tmx

Random Facts About Me



I've been tagged!

Kristen at {Me vs Myself} has tagged me for a Kreativ Blogger Award, mentioning my blog as one she loves to read. (Thank you Kristen!) So now it's my turn to pass it on... What I have to to do is answer 10 questions about myself, give you 10 random facts about myself, and then tag 7 amazing women that I love to read. {If reading random facts about other people bores you, please feel free to skip on down the page to the list of blogs I've linked to - they're probably more interesting than random facts about me!! Lol!}

Okay, here goes...

The Ten Questions

1. What is my favourite song? Well, I seem to have a new favourite song every couple of weeks... But one that is really special to me is "Day is Done," a lullaby by Nancy Honeytree that I sang to each of my four kids as babies and young children, because it brings back precious memories of holding my babies and singing to them. My oldest girl knew the whole song off by heart by the time she was three - so cute. "Day is done, gone the sun, but we need not fear. Darkness comes that we may see the stars and know that God is near..."

2. My favourite dessert? That would have to be something chocolate and comfort-food-ish... like Chocolate Self Saucing Pudding, served hot with homemade coconut milk vanilla ice cream :)

3. What ticks me off? People who think way too much of themselves, especially guys who think they're God's gift to women! Ugh!!

4. When I'm upset, what do I do? Retreat into my shell, disappear if I can, keep out of everyone's way til I get over it. Which usually doesn't take me too long. :)

5. What is my favourite pet? A horse. Not that I've ever had one - ha ha!! But it was always my childhood dream. The closest I ever got was a mischievous donkey that chased the neighbour's cows and tried to get me off his back by running under low branches...

6. What do I prefer - black or white? Black. It looks classy, and doesn't show all the food spatters from my constant cooking. ;)

7. What is my biggest fear? Losing my children. I hope they'll always be close to me, if not in body, at least in spirit.

8. What is my attitude? "Life is like a great big canvas. Throw all the paint on it you can." (Danny Kaye) And don't be afraid to make a mess. (Me)

9. What is perfection? God. That's about it. It sure isn't me!!

10. What is my guilty pleasure? A late night snack of a square or two of Lindt 70% cocoa chocolate dipped into homemade macadamia-cashew-almond nut butter. Okay, maybe three squares.



Ten Random Facts About Me

1. My parents are from Texas (USA) and we did lots of travelling when I was a kid. I love to travel. And I love my family. (I have two sisters and a brother.)

2. When I was growing up, we had no TV, no computer, no nintendo/play station/wii... and I think that's what helped all of us kids become so creative! I spent my spare time playing outside, reading, writing, drawing, painting, sculpting, playing the piano and cooking.

3. I've always loved art, sold my first artwork at 16, went to university to study art, and then became a graphic artist. I worked from home as a graphic artist after having kids.

4. I learnt to drive in a 1968 Mustang on the back roads of West Texas, amongst the cotton fields. My dad used to be into drag racing (before he became a pastor!), and he taught me how to race start and race shift. I used to beat the guys in their hot cars at stop lights. It doesn't work so well in a 7-seater van. ;)

5. My mum taught me to cook at a very young age. She encouraged us to experiment and make up recipes. My favourite experiments always had something to do with chocolate cake!

6. We have four kids - two girls, two boys, aged nearly 15 down to 8 - and I homeschool them. Yes, I am crazy.

7. I am not a super woman. My house is generally a mess. Just in case you wondered. I'd rather 'create' than clean.

8. I think people are so interesting. I love to meet new people, chat, and spend time cooking with friends. That's why I love my job. :)

9. I'm never bored. I don't know how anyone could be bored! There's so much to do and learn and see and read and I just wish I had time for it all!!

10. I'm writing a cookbook of my quirky recipes and tips, and I'm really excited about it!!! :D

Chia Seed, Buckwheat & Quinoa Bread {egg free & gluten free}


I've been playing with different variations of gluten free breads for a while now, trying to figure out one that works well without eggs. I've finally found one! I got some ideas from different recipes, and after some tweaking I came up with this bread, which is made from ground up chia seeds, buckwheat and quinoa, along with tapioca or arrowroot starch and xanthum gum. It's simple, not too expensive, and tastes great! The texture isn't crumbly at all - the chia seeds and xanthum gum work really well to make it soft and pliable.

I know someone's going to ask me if this can be made without yeast - I haven't tried that yet, but it may work with baking powder instead of yeast... If you try it, let me know how it goes.

The secret to getting the texture right on this bread is to cook it for long enough that it's not still sticky inside. The crust will get quite brown - don't worry, it won't dry out. It needs to rise for an hour and cook for an hour, maybe even a little more. You can make two loaves at once by grinding the dry ingredients in two lots, removing the first lot to a bowl, and mixing the two loaves separately. The dough is very thick and sticky, so it's a bit too much to do two loaves at once.

Because it's a moist bread, it lasts really well for a couple of days. Great for sandwiches, or toast. Add in a couple of handfuls of seeds towards the end of the kneading time if you want a seeded bread.

Recipe makes 1 loaf

1. Grind on speed 9 for 1 minute:
- 65g buckwheat
- 80g white quinoa
- 40g chia seeds

2. Scrape down sides of bowl and add remaining dry ingredients, mixing on speed 6 for 10 seconds:
- 170g arrowroot or tapioca starch (preferably additive free, like the one in the picture)
- 1 heaped tsp instant yeast
- 1 tsp xanthum gum
- 1/2 tsp baking soda
- 1 tsp fine sea salt


This is the arrowroot starch I buy -
it's cheaper in bulk, and this one is additive free

3. Add wet ingredients and mix on speed 6 for 10 seconds, or until dough comes together. (It will be a very thick, sticky dough - not as 'dry' as regular bread dough, but not as wet as a cake batter.)
- 30g macadamia oil
- 25g raw honey
- 250g warmish water

4. Knead on interval speed for 2 minutes.


5. Use the Thermomix spatula to scrape the dough out of the Thermomix bowl, into a baking paper lined loaf tin. (Once you get most of it out, the easiest way to get the sticky dough off the blades is to whiz for a few seconds on turbo, then you can scrape the rest out with the spatula.)


If you like, you can sprinkle the loaf with a little water, using the back of a spoon to smooth the surface. Cover loosely with a plastic bag (so it doesn't touch the dough) and leave to rise for an hour in a warm spot.


6. Preheat oven to 160 degrees. Place bread in oven and cook for an hour or so, or until nicely browned. Turn out of bread tin and check underneath the loaf to make sure it's browned all over. If not, cook for another 5 to 10 minutes upside down, to brown underneath. Allow to cool on a rack before slicing.

Thermomix Menu Plans - 4th June


We have sunshine! Winter is here, and the beautiful Far North Queensland weather is kicking in. If any of you are planning a visit to FNQ, this is the time to come! :D Cool, but not too cold, lots of lovely tropical fruits and seafood, and beautiful sunny days... we hope... Well this is supposed to be our 'dry season' - we only have two seasons here you know, wet and dry! So let's hope the sunshine stays for a while.


Miss C is enjoying the dragonfruit at the moment, and we've also had lots of custard apples, pomelos, grapefruit, limes, avocadoes, bananas, pomegranate, pineapples and pawpaws. Lovely. (Note: if you haven't tried dragonfruit and strawberry fruity dream yet, you really should!)

Yesterday I made some gluten free profiteroles, which I haven't done in ages - I don't know why I haven't, they're so easy and yummy. Maybe it's because of all the eggs I use when I make them...

I went through almost two dozen eggs yesterday what with the scrambled eggs for breakfast, profiteroles, pastry creme, and poached eggs for dinner! Oops. Ah well, eggs are so good for you. And I do have six egg whites left over, so I'm thinking about what to make with those. Not pavlova - it never works with natural sweeteners and I can't bear the thought of using all that sugar! And not angel food cake - same deal. Maybe some apricot almond macaroons.

Thursday:
Thai fish cakes (tmx - Seafood cookbook) & salad

Friday:
Lentil bolognese (tmx) with spelt pasta and salad

Saturday:
(lunch) Avocado & salad pizzas with almond flour pizza bases (tmx)
(dinner) Lamb roast & veges (gravy in tmx)

Sunday:
Pan fried fish with coleslaw (tmx) and baked veges
