Thermomix Menu Plans - 7th May

How's the menu planning going, everyone? Anyone want to join in posting your menu plan each week? It's been a bit sparse lately! You can make your plan as detailed or vague as you like - even if it's just a list of the main meals you're thinking of making for the week, that's great. I'm only posting main meals at the moment, basically because I'm flat out and I don't have time for long blog posts... I know you can do it. Even my 8 year old daughter writes out meal plans - see?

Um, yeah. I think I need to re-train her.

Oh well, as long as it's banana 'ice-cream' and natural sprinkles, I won't worry too much. ;) Or maybe I'll just make her this healthy 'Breakfast Sorbet'...

This is kind of a nut and muesli sorbet, very filling and healthy -
a great breakfast (or mid-morning snack) during warmer weather!

This week I thought I'd share some breakfast recipe links for those who need breakfast time inspiration. I really don't know how some people can stand to have the same old 'weetbix and toast' for breakfast every day - not my idea of fun. Or good health, either. So here's a few of our favourite breakfasts - I hope these recipes will make you excited to get up in the morning!

Pina Colada Porridge

Cook up some porridge using rice or quinoa flakes, add some coconut cream
and a dash of vanilla extract, top with fresh pineapple, sliced banana,
fresh grated coconut (or dry shredded), chopped macadamia nuts,
and a sprinkle of rapadura (optional). Or for a completely raw, grain free version,
try soaking some chia seeds in coconut cream and water for half an hour to
make a raw porridge, then add remaining ingredients. Yum!

(Pina Colada Porridge is from Cyndi O'Meara's 'Changing Habits, Changing Lives Cookbook' - check it out for heaps of delicious breakfast ideas.)

This really is so quick to make for breakfast - quinoa flakes, nuts, seeds, dried fruit, a little honey or pure maple syrup, a little coconut oil and spices... too easy.

Make this the day before and enjoy it toasted for breakfast. Contains no
sugar, only a couple of tablespoons of honey and an apple to sweeten.
Leave out the honey if you can't have it.

Fruit Salad

This is something the kids like to make for breakfast - no need for a
recipe for this. If you've always got plenty of fresh fruit on hand,
it's easy to whip up a great salad for breakfast.
Sprinkle with some chopped nuts for protein, and shredded coconut
if you like, and even some raw cacao nibs for extra crunch
and an added energy boost!

An extra special breakfast! Berries, sultanas, almonds, cacao nibs,
nut butter, and pure maple syrup - so good.

Another special one - chocolate waffles with cashew cream...
and chocolate sauce if you're feeling really decadent!

This waffle/pancake recipe is very versatile - you can use pretty much any grain (or buckwheat, or quinoa) to make them. I often make them with buckwheat and almonds. The ones in the picture above are made completely from brown rice, ground in the Thermomix. So simple, and very light and crispy. We like them with fruit, pecans and pure maple syrup. Or the pancakes we like to sprinkle with rapadura and drizzle with lemon juice.

Those are a few breakfast ideas... we also eat a lot of eggs for breakfast (scrambled, poached, fried, boiled, omelettes...), meat (with scrambled eggs, or with rice, or stir fried with veges), sometimes toast (spelt or gluten free bread), porridge with fruit in it, and generally a smoothie or fresh juice of some sort. For smoothie and juice ideas, see this post.

Now, before I go on to my menu plan, can I just put in a little plug for my blog? If you haven't already voted for the Best Australian Blog for 2012 - People's Choice Award, how about voting for mine! :D All you need to do is click on the button on the right at the top of my blog, and follow the prompts. Hurry, there's only two days left to vote!! Thank you! :)

So what's cooking this week? Here's our plan - I hope a few of you will link up your menu plans below with the Mr. Linky widget too... If you need help knowing what to do, read Thermomix Menu Plans. If you'd like some help getting started with menu planning, read How to Menu Plan.

Monday:
Creamy Chicken & Brown Rice Soup - an old favourite, loved by many! To bulk it out, I cooked it on Varoma temp with zucchini and peas steaming on top, and extra chicken in the soup. You could add all sorts of veges this way, and stretch it to feed a bigger family.

Tuesday:
Steak, steamed veges, and Cauliflower 'Cheese' - veges (including cauliflower) steamed in Varoma; 'cheesey sauce' cooked in Thermomix and poured over cauliflower, then browned quickly under grill.

Wednesday:
Sausage Casserole with Dumplings - sausages are cooked in the Varoma while a red sauce simmers below in the bowl; sauce and sausages are removed to a baking dish, and dumplings made in bowl, then dropped onto casserole and baked in the oven. Comfort food!

Thursday:
Fish with quinoa salad - shallow fried fish (cooked like this); quinoa cooked in Thermomix rice basket then mixed with salad ingredients.

Friday:
Baked sweet potatoes with toppings and leafy green salad - baked beans with mince and/or 'cheesey sauce'.

Saturday:
Split Roasted Chicken with Lemon Sauce, mashed potatoes, leafy green salad - mashed potatoes and lemon sauce prepared in Thermomix.

Sunday:
Chicken & Avocado Omelettes, tomato soup, and leafy green salad - omelettes cooking in Varoma while soup cooks in bowl underneath. (See Varoma cookbook for how to make omelettes in the Varoma. Tomato soup is my tweaked version - will try and post recipe soon.)

Thermomix Menu Plans - 28th November

How can it be Monday again already? I'm sure the days speed up as it gets closer to the end of the year! Although the kids thinks time slows down as it gets closer to Christmas... Miss C has been begging me for weeks to put up some Christmas decorations. I finally gave in and put up a few, and we've done a little bit of Christmas cooking already too. The gingerbread men are all gone (I think we'll go through a few batches of those!), so we're hoping to make some more this week. We have quite a large collection of cookie cutters, because we have a family tradition of making cut-out Christmas cookies with all the kids (cousins, neighbours and friends) every December, which is a lot of fun. And I just won some animal shaped cookie cutters from Edible Issues' Spring Hill Farm gluten free baking kit giveaway, which the kids are excited about! So lots of cookie making is planned. A plate of hand decorated cookies are a great gift for neighbours, school teachers and friends. And it keeps the kids busy on the holidays.

As we get closer to the end of school, I'll be posting some more holiday cooking ideas... still a bit crazy here with running Thermomix Christmas Cooking Classes, finishing up school work, and getting people's Thermomixes ordered and delivered before Christmas. What a great present! If you're wanting a Thermomix for Christmas, make sure you order before the 9th of December to get it in time... And don't forget there's a special deal at the moment where you can pay it off over 12 months, interest free, no deposit. Woo hoo!!!

Mother's Day Mess - a great alternative to the usual Christmas trifle!

So another busy week for me this week, but I'm sure I'll manage to fit in some baking. I don't put my baking on my menu plan, as I just fit it in wherever I can. Here's some of the things I'm hoping to make this week (both baking and pantry staples):
- Gingerbread men
- Mini gluten free, egg free, dairy free gingerbread cakes
- Dark chocolate bark with craisins and roasted almonds and pistachios
- Gluten free Christmas cake (based on the Celebration cake in the EDC, but with my gf flour mix)
- Dairy free German chocolate cake (for my hubby's birthday)
- Gluten free waffle iron brownies with chocolate sauce
- Gluten free bread (Cyndi O'Meara's recipe)
- Spelt artisan bread
- Christmas wreath bread
- Blender batter berry muffins
- Quick quinoa granola
- Mango butter (from Melanie Avery's new cookbook, "Let's Celebrate Christmas - Additive Free")
- Chicken stock paste
- Spelt tortillas
Here's a youtube clip I made recently to show the method of making your own tortillas/wraps. It's very easy, and they taste a lot better than shop bought ones, not to mention being a lot healthier!

Here's my menu plan for this week - I hope you'll share yours too, and link to it below so we can all get some inspiration from each other. For link up instructions, check out Thermomix Menu Plans; or if you're new to menu planning and need a little help, read How to Menu Plan. If you'd like a menu plan template that you can print out and write your weekly plan onto, there's one here at My Little Thermomix. Have a great week!

Monday:
(lunch) Chicken & cashews with coconut rice and coconut-cashew satay sauce (tmx - to show a new Thermomix owner how to use her Varoma)
(dinner) Boiled egg version of Curry in a Hurry (tmx)

Tuesday:
(lunch) Baked potatoes & salad (sandwiches for kids - school day)
(dinner) Grain free pasta made with vege pasta sauce (tmx) & zucchini 'noodles' made with vege spiralizer & steamed in Thermomix

Wednesday:
(lunch) Thermomix demo here

Thursday:
(lunch) Pasta e Fagioli (tmx - using gf noodles)
(dinner) Roast chicken & veges (for family, while I'm cooking at our Thermomix Christmas Class!)

Friday:
(lunch) Chicken & brown rice soup (tmx - using leftover chicken)
(dinner) Zucchini & smoked salmon fritters (tmx - from Melanie Avery's new cookbook "Let's Celebrate Christmas - Additive Free") & salad

Saturday:
(lunch) Thermomix Christmas Party!! I'm taking a Christmas potato salad (tmx),Mother's Day Mess (obviously it doesn't have to be Mother's Day to make this!), chocolate almond pistachio cranberry bark, and Christmas wreath bread (tmx).
(dinner) Fish sandwiches (bread made in tmx)

Sunday:
(lunch) Roast lamb & veges, gravy made in tmx
(dinner) leftovers

Phew! I've got lots of cooking to do... better go get started!

Thermomix Menu Planning & Updates & Restaurant Review!

Hi everyone, it's been a while since I've had a chance to get any blogging done, so there's lots of news to share!  If you're looking for the menu plan, scroll down past all the photos and you'll find it somewhere at the bottom... Otherwise, sit back and enjoy the photos and news update! :)

Two weeks ago I flew to Perth to do my Junior Group Leader training for Thermomix.  What an amazing week! On the way we stopped off at Ayers Rock (Uluru) for a quick look (my girls were with me, as they were going to stay with Nana and Poppy in Perth for the week) - what a beautiful place... I was amazed by the colours and wished we had more time there...

It was difficult getting Miss C back on the plane - she really wanted to keep chasing birds, catching grasshoppers, climbing trees, and playing in the red sand!

We finally made it to Perth, the girls went off to Nana's and I got to meet lots of lovely Thermomix ladies over dinner, at a restaurant near our resort. It was a bit of an exhausting first day - I was up for 22 of the first 24 hours!  Actually, we had a lot of late nights, but it was worth it... We had a great week, learnt heaps, met some great people, made lots of new friends from all over Australia (and New Zealand), and were totally inspired!

Room-mates! Vanessa, me & Bronwyn

Sandy & Tina

Julie & Rene

Yvonne & me

What a wonderful bunch of people belong to the Thermomix world... All the consultants and group leaders I met love their job, and I didn't meet anyone who thought of it as 'just a job' - even the staff at the office love their Thermomixes and were happy to have a chat about what they'd been cooking - it wasn't 'just a job' to them either! I was very impressed by the atmosphere at head office - everyone was so friendly. What a great company to work for.

I stayed a few extra days, as I was running an Allergy Friendly Cooking Class at the Thermomix headquarters on the Friday night, so I was able to go along to the 10th Anniversary celebration for Thermomix in Australia on the Friday morning. That was really exciting - it was great to hear Grace (the lovely lady who brought Thermomix to Australia) tell how it all started, and how it was a good five years before there was much interest, and how quickly it's growing now! Did you know there are over 35,000 Thermomix owners in Australia now?? Wow! And we are the fastest growing distributor in the world, so watch out world, here we come! Grace's energy and passion are catching, and I love her attitude - in her speech she said, "It's all about customer care... We don't teach our consultants 'selling skills'. The product sells itself. We teach consultants 'people skills', and that's really important."

Happy 10th Anniversary,
Thermomix Australia!!!

who've been with Thermomix for the whole 10 years!

We had a lot of fun at my Allergy Friendly Cooking Class on the Friday night - the ladies who helped were wonderful, and it all went smoothly. Except for the chocolate mousse mixture turning to jelly before it got drizzled into the egg whites, because I forgot to take it out of the freezer where it was cooling - lol. But Anne and Meagan sorted it out, so it worked in the end. (Thanks guys!) :)  It was great to meet lots of the people I often talk to on the Thermomix forum and my blog - a lovely bunch of Thermomix addicts who I would've loved to have spent more time with!  Here's a few photos of the class...

Chatting before the class...
(Meagan & Anne working hard in the background!)

I absolutely LOVED the kitchen - there are cameras over the two Thermomixes which show what you're doing on a screen overhead!  It's so good when you've got a crowd - they can all see what's going into the bowl, and what you're doing... only thing is, they can also see any mistakes you make!! Ha ha...

Making the gluten free pizza bases...

Thanks again to all of you who came along - I loved meeting you all, and I definitely want to come back to Perth again - loved every minute!  If you'd like to try any of the recipes I made at the class, they're listed here on the Thermomix Recipe Community, with links to each recipe.

"The Greenhouse" restaurant, Perth

One of the highlights of my week in Perth was getting to go to "The Greenhouse" for dinner!!! Ever since Matt Stone went up against Neil Perry on Iron Chef, I've been dying to go to his restaurant - partly because they use the Thermomix there (yay!), but also because I just thought Matt was so amazing and innovative in his cooking and his way of presenting his dishes. (I still think he should have won!) So when I found out I was off to Perth for training, I was determined to get there... and a few others had the same idea, so on our night off we took a taxi into the city to visit The Greenhouse.  And you'll never guess what we saw as we walked in...

They were using the Thermomix!! YIPPEEE!! Of course, we were all jumping around like silly schoolgirls, calling out to the chefs and asking them what they were doing and what they used their Thermomix for, and how many they have*, and telling them we'd come all the way from the East coast to check out their restaurant, and taking photos and videos... they thought it was pretty funny, and enjoyed all the attention. :D

Unfortunately, Matt wasn't there, as he'd gone to Sydney to set up a 'pop-up' Greenhouse restaurant that will be open for only 10 weeks - so if you live down that way, don't miss it!  It's at 'The Rocks', Sydney harbour, open Mon - Sat (7:30 - Midnight) Sunday (10am - Midnight), for only a few more weeks. Check out this video of the pop-up restaurant, designed by Joost - it is SO cool! *(They only have one tmx in each restaurant, but they wish they had more, and Matt wants one at home - someone give him one!!)

Us at The Greenhouse - Front: Denise, Bronwyn & Vanessa;
Back: me, Amanda, Rochelle & Sue

They grind their own grains and make their own breads at The Greenhouse (and the flatbread I ate was delicious - I wonder if they'd give me the recipe if I ask for it...)  Everything's rustic and recycled, and the theme is 'waste not, want not' - even the toilets are water-saving, and the hand towels are calico squares that get washed, not chucked in the bin!

Yummy wholegrain breads...

A wood-fired oven for cooking the breads & pizzas...

An interesting water jug...

The food was brought out on wooden boards, about 5 or 6 courses, and we all shared... we ended up paying about $30 each for the main meal, and we were all very full! Although we did manage to fit in a little bit of dessert :) Here's a few of the dishes we had... (Sorry the photos aren't too good - the light was very low, and I only have a little 'point & shoot' camera...)

An amazing dish of chorizo sausages, fried croutons, piquillo peppers, and a slow cooked egg that you mix in as a 'dressing'; and chickpea falafel in the background - so yum!

Babaganoush (lovely smoky flavour) with whole grain flat bread

Polenta & poppy seed crusted cuttlefish
with iceberg lettuce and a dressing

The BEST slow cooked lamb shoulder, with flat breads,
and a salad topped with slivers of pickled onion, and aioli

It was all just delicious! And the atmosphere was great - a very friendly, helpful waitress, friendly chefs, and a great group of friends to enjoy the experience with. :)  What a great restaurant! Anytime I'm in Perth, I'll be going there again, for sure.

Me & Vanessa at The Greenhouse

So now I'm back home trying to get into the swing of things as the Group Leader for the Atherton Tablelands and Cassowary Coast... It's an exciting new focus for me, and I'll be working on building a team of great consultants up here, so if you'd like to join us please let me know! I love this job, and I know a lot of you Thermomix addicts would love it too. :D

This week is already flying by, so before it gets too far along I'd better post my menu plan! It helps keep me on track, and makes cooking for my family a lot easier. Here's my plan for this week... Keep in touch, and I hope you all have a great week. :)

On My Mind...

Waiting for Cyclone Yasi to hit...

Hi everyone, I haven't had time to post a menu plan or recipes this week (or last week, due to the cyclone), but I thought I'd just share a few photos and thoughts of things that have been on my mind lately.  This post is linked to "On My Mind" at Down to Earth, a wonderful blog about living simply.

The photo above is one I took of my youngest daughter on the night of Cyclone Yasi, when we had no power and were waiting for the long night to end.  I just love this photo - she looked so peaceful and unworried about the cyclone. I felt the same way - I was concerned, but not frightened, knowing we are in God's hands. Not long after this she went to bed and slept through the worst of it. How wonderful to have the faith of a small child, that God is with us and all will be well!

The boys decided to sleep in the bathroom, 'just in case'.  But they were not worried enough to stay awake - they slept through the whole thing too!  The kids wanted to make sure the bird and the two guinea pigs would be safe, so they put their cages in the shower for the night, and they were fine. Until last night, when the neighbour's cat got the guinea pigs... oh well. :(

Writing stories by candlelight

All in all, the cyclone was scary, but not as bad as we thought it would be, thankfully. For a while there it was heading straight for us, but it veered south at the last minute and hit Tully, Cardwell, Mission Beach and Dunk Island. A lot of people down there have lost their homes - I'm sure you've seen the photos. It's so awful. All we had was a couple of trees down and a sleepless night, and no power for six days... which was enough to make me a little crazy!! I coped okay without phone, mobile, power, hot showers, Thermomix, oven, etc... but when I couldn't get onto the internet I started to lose it! Lol...  Most of the time I could keep in touch with my T-Touch, by sitting in the car and plugging it into the car charger, but for a while there we had no reception. I was so happy when it came back! :)

Cooking without my Thermomix was a bit of a challenge - we had a small metho burner (which my husband used for boiling the billy for cuppas) and a small gas cooker. I came up with a few ingenious ideas!  Like this one for heating up my spelt tortillas... I wrapped them in foil, placed them on a cake rack, and warmed them over the gas camping cooker on very low heat.  It worked great! (Note: I learned that you don't lean over the metho burner with your hair down - I burnt the ends off my hair and gave myself a fright!!)

We still ate well despite only having a little gas cooker to cook with - although I think the kids got a little tired of fish, as we had it for three meals in a row to use it up...  Thankfully I didn't have a lot of meat in the freezer though, and only lost a couple of bags of grains that got wet and damaged in the thawed out freezer. At least I got the fridge and freezer cleaned out, which desperately needed doing, just in time for my half yearly bulk order of grains, seeds, flour and Rapadura!

Fish cooked in the frypan (coated in cornmeal, flour, sesame seeds & seasonings) - served rolled up in spelt tortillas with mayo and salad.

This was my husband's favourite 'cyclone dinner' - spicy Mexican chicken (halved) cooked with veges in a pan on the gas cooker (with a little water in the pan and the lid on, over low heat - took about 45 mins).  It was very tasty!  (The chicken stayed frozen for a few days in our big freezer. We cooked whatever was in the freezer as it thawed out.)

After about six days without power I was REALLY missing my Thermomix, so a friend lent us his generator as his power had come back on. The first thing I made was a cranberry relish (I needed to use up the last of the thawed berried from my freezer) which we had that night on a meatloaf, also cooked in the Thermomix. Of course, once we had the generator all set up, it was only another hour before the power came on... typical!  But at least I got to try out the Thermomix with a generator, which I hadn't done before. (It was a 2 kva generator with an inverter - I wouldn't recommend using one without an inverter for your Thermomix, and don't use it at the same time as your fridge and freezer are plugged in, as they can cause power surges.)

So now the power's back on and all is well... it's taken me a while to get the house back in order - it looked like the cyclone hit inside worse than outside! Lol. Now I'm frantically getting ready for my trip to Perth for Junior Group Leader training (for Thermomix) and the allergy friendly cooking class I'm running there on the 18th. I'm really looking forward to meeting some of you there! Can't wait :) Here's the menu for those of you who are interested - it's all dairy free, gluten free and naturally sweetened, with some egg free and raw dishes too. I'll be posting the recipes on the Thermomix Recipe Community for those who want to try them (although most of them are here on my blog too).

Menu for Allergy Friendly Cooking Class, Perth:

- Raw Cashew Cream & Cashew Milk
- 'Green' Sorbet (cashew milk, berries, rapadura, baby spinach, ice, egg white/frozen banana)
- DF Cream Cheese Dip with rice crackers
- Grain Free Pecan Cake (served with cashew cream)

I'll also be explaining why it's best to avoid refined sugars and what to use instead, how to cook gluten free breads, how to substitute for dairy in recipes, and lots more.

So it's going to be a busy week next week with training and cooking and all! It may be another week or more before I get back to blogging, but I'll keep in touch via my Quirky Cooking Facebook page. Please drop by and say hi! Hope you all have a great week.

Jo :)
